Method

  1. 1

Gently warm the milk in a small bowl, then add the saffron strands to allow them to bloom, releasing their vibrant color and delicate aroma. Set aside.

  2. 2

Crumble the fresh khoya (mawa) into fine pieces. In a heavy-bottomed pan or kadai, melt the ghee over low heat, ensuring the pan is evenly coated.

  3. 3

Add the crumbled khoya to the pan. Sauté continuously for about 5-7 minutes on low to medium heat, stirring gently until it softens and releases a rich, nutty fragrance. Be careful not to brown it too much.

  4. 4

Introduce the granulated sugar to the khoya mixture. Continue to stir until the sugar completely dissolves and the mixture starts to thicken, pulling away from the sides of the pan. This will take another 8-10 minutes.

  5. 5

Stir in the bloomed saffron-milk mixture and the green cardamom powder. Mix thoroughly until the saffron's golden hue is evenly distributed and the fragrant spices permeate the sweet.

  6. 6

Once the mixture reaches a dough-like consistency and forms a single mass, pour it onto a ghee-greased plate or baking tray. Gently press and spread it evenly to about a 1/2-inch thickness using a spatula.

  7. 7

Sprinkle the chopped pistachios evenly over the surface. Allow the Khoya Delight to cool completely at room temperature, then cut into desired shapes (squares or diamonds) before serving.

👩‍🍳 Chef's tip

For an extra rich flavor, you can roast the khoya a little longer until it turns light golden. Ensure the sugar is fully dissolved to prevent a grainy texture. Store the Khoya Delight in an airtight container at room temperature for up to 3-4 days, or refrigerate for longer freshness.
