Prepare the Buffalo: Thinly slice the buffalo tenderloin against the grain. In a bowl, toss the slices with 1 tablespoon of soy sauce, 1 teaspoon of cornstarch, and a pinch of black pepper. Let it marinate for at least 10 minutes.

Craft the Savoury Sauce: In a small bowl, whisk together the remaining 3 tablespoons of soy sauce, 1 tablespoon of cornstarch, 1/4 cup water or broth, minced garlic, grated ginger, and optional red pepper flakes. Set aside.

Crisp the Spring Rolls: Heat about 2-3 inches of vegetable oil in a deep pan or wok to 350°F (175°C). Carefully add the Chinese Veg Spring Rolls, a few at a time, and fry for 5-7 minutes, turning occasionally, until they are golden brown and wonderfully crispy. Drain on a wire rack or paper towels.

Sizzle the Buffalo Stir-fry: In a separate large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated buffalo slices and stir-fry briskly for 3-4 minutes until browned and cooked through.

Infuse with Flavour: Sprinkle in the onion flakes with the buffalo, stirring for about 30 seconds until fragrant. Pour in the prepared savoury sauce, stirring continuously until the sauce thickens and coats the buffalo beautifully, about 1-2 minutes. Drizzle with toasted sesame oil.

Steam the Fluffy Bao: While the stir-fry simmers, steam the Bao Buns according to package directions, typically for 8-10 minutes, until they are wonderfully soft, warm, and plump.

For extra crunch, double-fry your spring rolls. Briefly remove them from the oil, let them rest for a minute, then return for another minute until extra crispy. Adjust the spice level of the buffalo stir-fry to your preference by adding more or less red pepper flakes.
