Method

    Begin by finely dicing one small onion and mincing two cloves of garlic. Thoroughly wash the 400g fresh spinach, shaking off excess water, and roughly chop it.

    Preheat your oven to 180°C (350°F). Heat two tablespoons of olive oil in a medium oven-safe skillet over medium heat. Add the diced onion and sauté, stirring occasionally, until it softens and turns translucent, about 5-7 minutes.

    Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.

    Add the chopped spinach to the skillet in batches if necessary, allowing it to wilt down completely. Continue to cook until most of its liquid has evaporated, about 5-7 minutes.

    Pour in 150ml of Kdd Cooking Cream, stirring it into the spinach mixture. Season generously with salt and freshly ground black pepper. Let it gently simmer for 2-3 minutes to slightly thicken.

    Using the back of a spoon, create four small indentations or 'wells' within the creamy spinach mixture. Carefully crack one egg into each well.
