- Prepare the Mixture

In a large bowl, add beef mince, onion, ginger, garlic, green chilies, coriander, and mint.

Add all spices, roasted besan, salt, and oil/butter.

Mix thoroughly for 3–4 minutes until sticky and well combined.

- Shape the Kebabs

Divide mixture into equal portions.

Shape onto skewers or form long seekh-style kebabs by hand.

- Chill

Refrigerate shaped kebabs for 15–20 minutes to help them hold shape.

- Cook the Kebabs
Pan Fry:

Heat a pan with little oil on medium heat.

Cook kebabs for 10–12 minutes, turning until evenly browned.
Grill / Air Fry:

Air fry at 180°C for 12–14 minutes, turning halfway.

Grill on medium heat until nicely charred.
